Sommelier-Winemaker Collaboration with Alex Starey of Keermont Vineyards
Tasting Notes: Typically only starting to blossom now after a year in bottle – beautiful elderflower and lemongrass notes, with a deliciously waxy, lanolin texture on the palate – a true food wine.
Winemaking Notes: There are two parcels of Marsanne on the estate, and this barrel was sourced from the younger, high-density vineyard site. Pressed with a degree of skin-contact into old French Oak and left to naturally ferment and undergo Malo, racked off its sediment before bottling, and the remainder of the barrel was topped up with a splash of Viognier just to assist in the aromatic ‘pop’.

Food Pairing Suggestions: This wine loves food. It wants to attach itself to creamy, buttery things, whilst at the same time enjoying fresh, spicy, aromatic elements. One of the most surprising pairings I’ve found is with pickled foods, such as a fresh mignonette sauce on oysters, but this could stretch over to ceviche territory, or even just keep it nice and simple with a block of Cheddar cheese and a jar of pickled onions.
