Sommelier-Winemaker Collaboration with Christa von la Chevallerie of Huis van Chevallerie
Tasting Notes: Crunchy, tangy and mineral, with beautiful, perfumed lemon and lime zest, hints of smashed grapefruit and all bundled up in a fresh and vibrant mousse which mellows out to provide a sense of richness.
Winemaking Notes: Viura is an incredibly vigorous grower, and bunches can get up to 1Kg in weight! Naturally, there is a lot of juice that’s offered as a result, so it’s easiest just to whole-bunch press straight into tank to settle. When you’re working with the Bubbly Queen that is Christa, you let yourself be guided by her insane amount of experience. Her batch contained some Chenin, whereas I wanted to see the real deal as to what Viura – one of the main cultivars in Spanish Cava – could do when left to its own devices. To round it off, we decided on a dosage of 6g of sugar per Litre.
