Sommelier-Winemaker Collaboration with Christa von la Chevallerie of Huis van Chevallerie
Tasting Notes: Crunchy, zingy green apple sherbet, with an intense mineral core, and orchard-blossom perfume. That salty-sweet, umami characteristic is truly unique, and expresses Chenin Blanc in a totally different way. This is very much a wine-geek kind of wine, but incredibly accessible with a dozen oysters…
Winemaking Notes: This started off as a barrel of base wine for Methode Champenoise which wasn’t up to the Huis van Chevallerie standard, but perfect for a thief. We kept this in barrel for 9 more months, and then came back to it – the wine had rounded off, gaining depth and complexity from the French Oak, but still needed a little something… The neighbours had some Roussanne and some Grenache Blanc, also from the Paardeberg going spare, and these became a small but significant component in the wine’s balance and complexity.
