Sommelier-Winemaker Collaboration with William Everson

Tasting Notes: If Vouvray was made in South Africa this would be its true rival. Slightly off-dry, beautifully rich and decadent, Tarte Tatin, Brioche, Cashew nut butter, totally insane.

Winemaking Notes: This was sourced from a beautiful 45 year-old bushvine site in Durbanville, which in 2015 was ripped up and turned into a car park, resulting in much heartbreak. Still hunting for a replacement site in the same region, as I believe Durbanville is a fantastic terroir for growing Chenin Blanc in the Western Cape.
